As environmental and health awareness increases, more healthcare institutions are incorporating plant-based meals into daily diets to promote sustainable health. Since 2012, the Marshfield Clinic Health System in Wisconsin has implemented the "Farm to Hospital Bed" initiative, growing fruits and vegetables on site for patient consumption.
In the UK, 53 hospitals have been offering vegetarian sandwiches since 2019. Malaysia has supported &ldquoMeatless Monday&rdquo since 2021, and in 2022, 11 public hospitals in New York City began serving plant-based meals as the default option.
Taiwan&rsquos Taipei Veterans General Hospital is promoting plant-based diets for staff and patients. Starting in 2025 (ROC year 114), the hospital offers meatless breakfasts every Monday, one weekly plant-based lunchbox, and a daily vegetarian noodle dish. It also launched high-protein, high-fiber plant-based meal sets with local and seasonal ingredients like eggs, tofu, tomatoes, and basil to achieve both nutrition balance and carbon reduction.

Experts suggest beginners start with one vegetarian day per week, using red quinoa, whole wheat bread, soy products, and high-fiber vegetables, paired with local fruits to gradually shift dietary habits. The Health Promotion Administration also recommends diverse intake for vegetarians from sources like whole grains, fruits and vegetables, legumes, and nuts to achieve a healthy and sustainable lifestyle.
