After getting married in Taiwan, many new immigrants explored job opportunities and broadened their horizons besides their full-time job. Chen Mei Mei (陳美美) from Kota Medan, Indonesia has been residing in Taiwan for more than 20 years. She created a channel named ‘Shui Shui Yin Ni Ma Ma (水水印尼媽媽Emak Medan di Taiwan)’, and filmed food & Cooking videos in both Indonesian and Chinese to introduce delicious Indonesian and Taiwanese gourmet food. In this episode of the ‘New Immigrants in Taiwan’ column, Chen Mei Mei demonstrated how to cook Gado-gado with rice vermicelli.

The ingredients prepared this time include an Indonesian special sauce, which is peanut butter with a unique flavor and spiciness. Besides being used in making Indonesian salads (Gado-gado), the sauce is also used to enhance the flavor of satay (Sate) – a more commonly known food by the Taiwanese.
“Gado-gado with rice vermicelli is a common snack in Indonesia, and it can be a proper meal as well,” says Chen.
For ingredients of making fried rice vermicelli, you need to prepare rice vermicelli, cabbage, garlic, shallots, and green onions.
Pour the oil into the pot, and when the pot is heated, add garlic and shallots to sauté, then add cabbage and rice vermicelli, and add an appropriate amount of boiled water.
Then add seasonings, including soy sauce, sweet soy sauce, salt, and chicken powder. After frying, add coriander powder and pepper. Chen reminded the audience that adding a little more coriander powder further enhance the flavor. After the rice vermicelli is cooked, green onions can be added.

The ingredients of making Indonesian salad include potato, fried bean curd, tempeh (Indonesian soybean cake), egg, Indonesian salad dressing (peanut sauce). For the vegetable, one can choose cabbage, bean sprouts, water spinach and common bean.
Vegetables should be boiled in water but not for too long to avoid nutrient loss. Potatoes, fried bean curd, and tempeh should be deep-fried or boiled in water as a healthier choice. Eggs should be cooked in the steam cooker.
Indonesian salad dressing needs to be thawed first and then soaked in cold water. Wait until all the ingredients are ready, choose the ingredients you like, add the sauce and sprinkle with onion crisps and biscuits, and you're done with Gado-gado with rice vermicelli.
