Chen Mei Mei (陳美美) from Kota Medan, Indonesia has been residing in Taiwan for more than 20 years. She created a channel named “Shui Shui Yin Ni Ma Ma (水水印尼媽媽Emak Medan di Taiwan)” and filmed food & Cooking videos in both Indonesian and Chinese. In this episode of the “New Immigrants in Taiwan” column, Chen Mei Mei provides step-by-step instructions on how to make Indonesian beef soup (印尼牛肉湯).

Ingredients include beef, cabbage, tomato, green onion, coconut milk powder. For the spices, prepare garlic, shallots, chili peppers, ginger, lemongrass, Candlenut, lemon leaves, and turmeric powder, and ground coriander powder.
Firstly, put garlic, shallots, candlenut, and chili peppers into the blender, and add a little amount of oil into the mixture, making it easier to be smashed. Later, add some turmeric powder and ground coriander powder, blend the mixture until it becomes a bit sticky. Lastly, pour the crushed mixture in a hot pot and stir-fry it slowly.

Add the beef to the spice mixture and stir-fry it. After the beef changes color, add water and boil the soup. While waiting, cut the cabbage, tomato, green onion, and chili pepper. Prepare coconut milk by mixing the powder and water and stir for later use.
After the beef soup is boiled and meat becomes soft and tender, add water as needed, then add salt, beef powder or chicken powder to enhance the flavor. When the soup is boiled, pour in the prepared coconut milk. Chen reminds everyone to stir the whole soup while pouring the coconut milk at the same time. Lastly, add all the vegetables and cook for 5 minutes. It is done and ready to serve.
Chen said that this dish includes meat and a lot of vegetables, which is very nutritious. One can also add rice to rice soup with beef. She recommends everyone to try making the Indonesian beef soup at home.
