Chen Mei Mei from Medan, Indonesia got married in Taiwan 20 years ago. She created a YouTube Channel named “Emak Medan di Taiwan” to share how to make Taiwanese and Indonesian dishes at home. As a travel lover, she also recorded her memories on videos. In this episode of the “New Immigrants in Taiwan” column, she demonstrated how to make an Indonesian dish – squid and fried tofu skin with fermented chili bean sauce. “This is an appetizing home-cooked meal!”

Chen Mei Mei is going to show off the cooking skills that she has gained over these few years living in Taiwan. The ingredients she prepared were squid, fried tofu skin, tomato, red and green chili, onion, parkia speciosa, garlic, shallot, galangal, etc.

Chen cleans the squid first by removing its innards and skins. She then sliced the squid with a knife at 45 degrees. “Remember not to cut off the flesh, so that the marinades and sauces would better stick to the squid.” Later, she added some lemon juice to lessen the fishy smell.

After preparing other ingredients, she then placed garlic, shallots, and onions in the frying pan with heated oil. After stir-frying, she added the rest of the ingredients and the key seasoning – fermented chili bean sauce. “When you see the squid gets rolled up into a ball,” she said. Besides, she also reminded everyone not to get the squid overcooked.

It's time to enjoy the dish. Chen put the food on the rice as the topping. She showed a contented smile once she bit into the squid. “The flesh is not too chewy or too hard either,” she said. She then gulped down the food and joked that “It seems like it’s even more difficult to become slim now.”
