Minimal, an innovative ice cream establishment in Taichung, Taiwan, has made history as the first and only ice cream shop to receive a Michelin star. Highlighting Taiwan's emergence as a fine dining destination, Minimal is among the 10 new additions to the island's Michelin Guide for 2024, bringing the total number of Michelin-starred restaurants in Taiwan to 49.

Founded by Arvin Wan, whose fascination with ice began in childhood, Minimal offers a unique dining experience. The two-story venue features a takeaway ice cream shop on the ground floor and a 20-seat restaurant upstairs. The latter serves a meticulously crafted seven-course tasting menu, with each dish named after its serving temperature. Examples include the -40°C Wild Ginger Flowers/Sake ice lollipop and the 0°C Loquat/Pear starter, showcasing Wan's mastery of sub-zero flavors and textures.

Wan's journey to creating Minimal was driven by his passion for ice and a desire to innovate. After leaving his role as head pastry chef at a Michelin-starred restaurant, he launched Minimal in 2021. Despite his sophisticated creations, Wan’s love for ice remains simple; he still enjoys inexpensive ice treats, a nostalgic connection to his roots. With Minimal, he aims to help adults rediscover the joy of ice cream, evoking the wonder of their first taste.
